Grilled Chicken Hot Dogs For Dinner

One reason I was excited for my kids school to start was that I will have more time. More time to work, more time to myself and more time to prepare healthy, home cooked meals for my family.

But the reality kicked in fast. The first day actually. I had to run a number of errands (a big number), drive kids to school (and back), care for little ones who are still at home with me. What I was thinking when I made plans to have more time?

Even though nothing gets done, there always has to be a healthy home cooked dinner at the table by 6 pm. That’s the one rule I never break.

And yes, sometimes I get little extra help. This time was Tyson® Grilled and Ready® Chicken Breast Strips that we purchased at Walmart during our weekly grocery shopping trip.

Mediterranean Chicken Hot Dogs

*We make our own tzatziki sauce. It’s pretty simple. Simply mix plain yogurt, shred cucumber, 1 small clove of garlic, pinch of salt, a drop of olive oil and some dry mint. It goes perfect in this sandwich with the grilled chicken.  

Assemble is pretty simple. Just make it the way you usually make your favorite hot dogs.

We warmed up the buns and the chicken strips. Placed the chicken (2-3 strips) into a bun, generously added tzatziki sauce, then some lettuce, tomatoes and sprinkled some feta cheese on top.

Yummy!
